Pioneering Designer Meat
ABOUT US

We Are a "CUT" Above the Rest
We are harnessing advanced biotechnology, combined with tissue engineering and process development to bring tasteful and delicious meats to the table.
Our meats are distinct in that they are “structured meats” like steaks, pork chops and chicken breasts. Unstructured meats have ambiguous forms, such as chicken nuggets or meat balls. Our technology has the capability to achieve the more complex challenge of manufacturing structured meat. Collateral benefits of our technology include clean air, clean water, and a pristine environment.
Our Lab Collaboration
Big Resources; Big Results
Atelier Meats has set up a multidisciplinary R&D collaboration with top experts at Rutgers University to bring together advanced technologies in tissue engineering, cell culture, and process development.
Atelier Meats also brings its own expertise in tissue engineering, process development, quality systems integration to accelerate progress from the bench to the dinner table.
Our Intellectual Property
We have filed a broad patent application to protect key aspects of our technology:
1.
Source and composition of our scaffolds.
2.
Methods of producing our scaffolds
3.
Use of our scaffolds to produce textured meat
4.
Methods for isolation of cells and re-population of our scaffolds with them

1.
Source of the unique bovine stem cells, the isolation and expansion methods of those cells
2.
Composition of the bovine stem cells as defined by unique cell surface markers
3.
Methods of differentiation of those multipotent bovine stem cells
4.
Methods of re-population of scaffolds with differentiated bovine cells
5.
Methods for production of nonhuman mammalian cultured meat fit for human consumption
We have filed a second patent to protect key aspects of the stem cells used for the production of our meats:

Dr. Joseph W. Freeman
Biomedical Engineering Professor
Rutgers University
Dr. Joseph W. Freeman is a Professor in the Department of Biomedical Engineering at Rutgers University. After earning his B.S.E. in Chemical Engineering from Princeton University and his PhD in Biomedical Engineering from Rutgers University, Dr. Freeman trained as a postdoctoral fellow at the University of Virginia focusing on bone and ligament tissue engineering. From there, Dr. Freeman became an Assistant Professor in the School of Biomedical Engineering and Sciences at Virginia Tech. There he developed technologies for the repair and tissue engineered replacement of bone and ligament and novel in vitro cancer models. In 2010, Dr. Freeman joined the faculty of Rutgers University where he has continued his work and added research projects in muscle health and muscle tissue engineering. He has over seventy publications in peer-reviewed journals, has authored one book, edited one book, and is an inventor on one patent. Dr. Freeman earned the Outstanding Engineering Faculty Award in 2020, is on the editorial board of several engineering journals, and is a fellow of the American Institute for Medical and Biological Engineering (AIMBE). Over his 18 year career, Dr. Freeman has worked with government agencies, foundations, and industry in the creation of novel systems for tissue engineering. He brings this wealth of experience to Atelier to create quality, textured meats from unique engineered constructs.

Dr. Yong Mao
Chemistry & Chemical Biology Associate Research Professor
Rutgers University
Dr. Yong Mao is an associate research professor in the Department of Chemistry and Chemical Biology at Rutgers University. After receiving her Ph.D. training in molecular biology and biochemistry from Rutgers University, Dr. Mao started her research career as a postdoctoral fellow at Princeton University focusing on the cell-extracellular matrix (ECM) interaction and the assembly and application of ECM. Dr. Mao expanded her expertise in ECM as a senior scientist at LifeCell Corporation before joining New Jersey Center for Biomaterials at Rutgers University as a research faculty in 2013. Since then, she has led the biological studies of ECM-polymer biomaterials and cultivated collaborations with industry on multiple translational research projects. She has made noteworthy contributions to the understanding of the tissue ECM and its potentials in tissue regeneration and wound healing. Dr. Mao lectures courses on ECM for undergraduates and graduates at Rutgers University. She has over forty peer-reviewed scientific publications and is an inventor for four US patents. With over 20 years research in ECM and ECM-mediated tissue regeneration both in academia and industry, Dr. Mao brings her expertise to this project to develop textured scaffolds using decellularized tissue ECM and sustainable cell sources from both primary and stem cells.
